How we work

Four things a land kitchen never has to survive

It heels, and things move

Every horizontal surface gets a lip, every door a positive catch, every appliance a mounting calculated for motion. A restaurant fridge in a beam sea empties itself onto the sole once, and only once.

Ambient is forty-five degrees

Compressors sized for a European kitchen fall over in an engine-room-adjacent galley in August. We specify for the worst ambient the vessel will see, which is why our cold rooms hold in the Red Sea.

There is nobody to call

Four hundred miles offshore, the crew are the engineer. Everything we fit is serviceable with hand tools, and the spares kit and the wiring diagram are aboard before we leave.

The chef gets the drawing first

Galleys are designed around plumbing runs and then handed to somebody who has to cook in them. Ours go to the chef at outline stage, and the plumbing moves.
